Paleo Chorizo Brussels Sprout Slaw (and other slaws)
This is one of my go-to Whole30 recipes.
Though the paleo/Whole30 diet is all about real, whole foods, that doesn't mean you need to slave all day in the kitchen. This takes maybe 10 minutes if you buy pre-washed, pre-slawed Brussels sprouts like I do and it keeps well for a few days.
When I first started the Whole30, I read so many labels. GOD THE LABELS. It's hard to find chorizo (or anything) without one of the no-no ingredients like nitrates, sugar, soy, etc. Luckily, since I already did all the label-scouring, that might take some of the guesswork out for you when you are grocery shopping.
Chorizo Brussels Sprout Slaw
Paleo, Gluten-free and Whole30 approved
- Wellshire All-Natural Smoked Chorizo (Whole Foods), cut into small pieces
- Pre-slawed Brussels Sprouts (Trader Joe's)
- Sliced almonds, toasted if you want
- Raisins (optional)
- Avocado
- Crushed red pepper
- Garlic powder
- Onion powder
- Salt, Pepper
- Lemon juice
Brown your chorizo. Everything else cooks in the chorizo oil, so you might not have to add any extra olive oil unless your ratio of sausage to sprouts requires it. Then add sprouts and a dusting of spices, sauté while stirring occasionally until the sprouts start to caramelize a little bit on the edges. It brings out the flavor so hard. Cut up the avocado while that’s going on. Then add lemon juice. Keep the heat on for another minute or so, put it in a bowl and sprinkle some (maybe toasted) almonds on top. Then eat that fantastic pile of food.
Below is another slaw that I made in a similar way, but with slawed broccoli instead. Not a great picture, but this one was pretty good hot or cold as well!
