Paleo Banana Muffins
Two words: BAKED GOODS
More words: I'm not great at baked goods.
With cooking, you can eff stuff up and still fix it later. With baking, it's a science. I'm bad at following directions in my own kitchen. I usually don't have the patience or the sweet tooth to care much that there are rarely baked goods in my house.
I bet you're super excited to try this recipe now that I've hyped up my baking aptitude.
Regardless, these came out really well and muffins are as convenient as can be to grab when you need a little snack or breakfast. They do have that healthy taste to them (maybe unavoidable?), but you'd never be able to tell that these are flourless!
Paleo Banana Muffins
paleo, vegan, vegetarian, gluten-free | makes 12 muffins
Ingredients
- 2 cups almond flour
- 1 T cinnamon
- 1 tsp ginger
- 3/4 tsp baking soda
- 1/4 tsp salt
- 1 tsp vanilla extract
- 1/4 cup maple syrup
- 1/2 cup water
- 3 eggs, beaten
- 2 ripe bananas, mashed well
- optional add-ins: sliced almonds, nuts, dried fruit, coconut, chocolate, whatever else you feel like putting inside or on top
Instructions
- Preheat to 350.
- Grease muffin pan (or use liners).
- Mix dry ingredients together in mixing bowl.
- Then add the wet ingredients and mix well. It's OK if there are banana lumps, but you don't want dry lumps.
- Pour batter into the muffin tins, top with sliced almonds (or whatever you want) and bake for about 25-35 minutes.
- Let cool on a cooling rack.
- Spread some nut butter on them or drizzle with coconut oil.
